Observation (CORRECTED DURING INSPECTION): Caramelized onions & mac n cheese (hot condiments) and hot held prepackaged burritos sitting 45C for more than 2 hours

All handsinks supplied with hot & cold running water,liquid soap, paper towel
All freezer units at or below -18C
All cooling units at or below 4C
All hot holding units other than hot condiments and burritos at or above 70C
*Sanitizer solution in bucket measured 100 ppm Quats.Ensure Quats solution is reaching 200 ppm level and the solution is changed every 2-4 hours or as needed. Verify the concentration with testing strip.

*Operator will provide a written sanitation plan of froster machine

*Above noted violations need to be addressed by the next inspection date April 18th, 2018

Recommendation:

Consider replacing dry storage shelving units in the future that is easily moveable (with wheels)for easier & efficient cleaning.
