Observation (CORRECTED DURING INSPECTION): Lettuce stored in garbage bags in the storage room prep. cooler and in the front area. Garbage bags can contain odour- reducing chemicals which could potentially be transferred to food.
Corrective Action(s): Discontinue this practice immediately.

Comments

-A secondary cooking step is required for the meat. "Guideline for safe preparation of donairs, schwarmas and similar products" provided during the inspection. This can be done in an oven, in the microwave or on a grill, but NOT in a hot holding/ warming unit.
-Discussed washing/ rinsing and sanitizing using the 2-compartment sink. Ensure that utensils are soaked in the chlorine solution after washing and rinsing for 2 mintues.
-Note: The 2-compartment sink will need to be upgraded to a 3-compartment sink if renovations or a change of ownership take place to meet current requirements.

All coolers were < 4 C.
All freezers were < -18 C
Staff member on site is FoodSafe certified.
Bleach spray bottle was at 100 ppm.
No evidence of pests.
General sanitation was satisfactory.
