Observation (CORRECTED DURING INSPECTION): Cut vegetables stored in lince cooler. Cooler was at 13C. Owner stated that a technician is coming in later today.
Corrective Action(s): Vegetables moved to alternate cooler. Discontinue use of this cooler until it can maintain 4C or less.

Corrections Noted:
√ Operator ran thermolabel through dishwasher before inspection and test strip passed. Final rinse reached above 71C
√ Bleach sanitizer in spray bottle measured 100ppm
Probe thermometer in line cooler was not accurate. Reviewed how to calibrate a probe thermometer. Use half ice, half water and leave probe thermometer in this ice bath until the needle stops, then (keeping thermometer in ice water) adjust nut at top of thermometer stem with a wrench until the needle points to "0 C".
