Observation (CORRECTED DURING INSPECTION): - Individual portions of milk and cream stored in cooler which was operating at 16C. Temperature records indicate cooler was at 52F at 10:00am with no corrective action taken.
Corrective Action(s): - Discard items as they were stored above 4C
- Review food safety and temperature monitoring procedures with staff to ensure corrective action is taken when temperture requirements are not met.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): - Quats sanitizer present from dispenser at sink; however, food contact surfaces (eg. cutting board on line cooler) are not being sanitized at sufficient intervals and wiping cloths not stored in sanitizer solution.
Corrective Action(s): - Store in use wiping cloths in sanitizer solution
- Ensure food contact surfaces and in use utensils (eg.knives) are cleaned and sanitized every 4 hours or more frequently if surface or utensil has been contaminated.

304 - Premises not free of pests [s. 26(a)]
Observation: - Mouse droppings noted on lower shelf in front service area behind baskets of individual packets of peanut butter, jam and honey are located. No evidence of damage to food products noted. Staff reported these items are removed from the shelving at night.
- Some mouse droppings noted behind chest freezer in dry storage room and on floor between boxes and under warewashing sink.
Corrective Action(s): - Clean up droppings and sanitize area in front service area [Completed at time of the inspection]
- Clean floor in storage room and under warewashing sink to remove droppings and sanitize area.
- Continue to monitor for any further activity and ensure droppings are cleaned up and area sanitized if additional droppings present.
- Store food items in pest proof containers

Note: Pest Control Technician was on-site earlier today and service report indicates no activity within traps in kitchen area. Inform Pest Control technician of areas where droppings have been noted so that these areas/issues are addressed.

Observation: - Food items have fallen behind chest freezers in the storage room.
- Boxes stored on the floor which can create harbourage areas and runways for rodents.
Corrective Action(s): - Clean up food items that have fallen behind
- Store all items off of the floor to facilitate cleaning and monitoring for pest activity. Remove any items which are not required for the food service portion of the business from food storage area.

Observation: - Front display cooler was operating at 16C. Temperature records from 10:00am state temperature was 52F; however, corrective action not taken. Non-potentially hazardous beverages and individual creamers and butter packets stored in cooler.
Corrective Action(s): - Repair cooler so that it is in good working order and able to maintain a temperature of 4C or colder. Do not store any potentially hazardous foods in this cooler in the interim. [Date to be corrected by: 28-Jul-2021]

Comments

General sanitation of food premises satisfactory
- Handsink supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures with the exception of the front display cooler (noted in violation above)
- Walk-in cooler 4C
- Countertop barista cooler 3C
- Line cooler 3C
- Chest freezers were maintaining product in a frozen state. Temperature of units were -19 to -21C
- High temperature dishwasher operational. Final rinse temperature was 76.7C at dish surface
- Quats sanitizer available from dispenser at warewashing sink. Concentration from measured 200ppm.
- No rinse quats based sanitizer (Grassroots #2 Disinfectant) present/in use for customer tablescontact surfaces.
- Pest control contract in place with service every 2 weeks. Most recent report (21-Jul-2021) provided by Manager and was reviewed at the time of the inspection.
- Manager reported he has completed Foodsafe level 1; however, unsure if certification has expired. To be verified on databased. If certification has lapsed, Manager will need to re-take course.
