Cleaning as noted on previous health inspection report has been completed, with the exception of the ventilation canopy. It was stated that the ventilation canopy is scheduled to be cleaned professionally later this week. Ensure that ventilation canopy baffles and exterior are cleaned regularly, in between professional cleanings, in order to limit the accumulation of grease.
