Observation:
1- Frozen food packed in boxes noted at -7C in walk in freezer. It was observed freezer is overloaded and this was discussed with staff. Also, Airflow noted blocked by boxes in front of the compressor fans.
2- Upright 2 door freezer in the kitchen also measured at -2C to -3 C. This unit also have loads of boxes which hinder the door from closing. Rubber seal noted out of place as well.
Corrective Action(s):
Do not overload freezers.
Ensure rubber seals are properly in place and are in good working condition.
Ensure these units maintain freezing temperature below -18C.

Routine inspection conducted.

- Hand washing stations fully supplied.
- Coolers measured at or below 4C. Temperature monitoring is to be kept updated twice daily. And, records to be kept for next routine inspection.
- Hot holding unit measured at or above 60C.

Important Reminder: Temperature for all cooling, freezing and hot holding units are to be measured twice daily and recorded. Keep records.

- 3- comp sink maintained. 200 ppm QUAT sanitizer available in one sink. Sanitizer also available in sani buckets in kitchen. Buckets are labeled.
- General sanitation is good. Note: Ensure to wipe down counters, cutting board and other food surfaces with sanitizer frequently.
- Hood vent noted clean.
- Mop bucket noted empty.
- No obvious sign of pest activity at this date. Back door noted close.
Kitchen well lit.
