Ensure the following prior to re-opening:
- All coolers must be maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- All freezers must be maintained at or below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding units must be maintained at or above 60 degrees Celsius (140 degrees Fahrenheit).
- Maintain temperature logs for all cold holding units.
- Dishwasher must reach a final rinse temperature of at least 82 degrees Celsius at the manifold for adequate sanitizing of dishes.
- Concentration of food contact sanitizer = 200 ppm QUATs.
