301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Single use packaging materials/containers for cakes and other food items were visibly soiled with grease and dirt. Some containers were stored directly on the floor.
Corrective Action(s): Discard these packaging materials that are contaminated. Store all packaging containers at least 6 inches off the floor.

Observation (CORRECTED DURING INSPECTION): Front handwashing station is missing paper towels inside the paper towel dispenser.
Corrective Action(s): Provide paper towels inside the dispenser. In the meantime, store paper towels near the handwashing station.

Observation: Mice and rat droppings observed in multiple locations throughout the kitchen and storage room on the second level:
- dry storage room on first floor
- dry storage room on second floor (ie. behind the laundry machines, behind boxes)
- dry food storage room
Corrective Action(s): Remove the droppings and clean and sanitize using 200 ppm chlorine solution.

Observation: 1) Walk in cooler measured at 14C
2) Front display cooler measured at 14C. There was significant accumulation of ice on the air vents.
Corrective Action(s): 1) Call for service. The walk in cooler must maintain temperature < or = 4C at all times.
2) The operator started a defrost cycle for the display cooler. Remove all food items from the cooler.

Observation: 1) The back prep sink is leaking. There is pooling of water underneath the sink.
2) There is significant gap on the bottom of the gates in the delivery area.
3) Missing light covers in the main kitchen.
4) Missing back splash board behind the two compartment sink.
Corrective Action(s): 1) Fix the leak. Do not use this sink until the pipes are fully sealed. Clean the pooling water.

Observation: There was no FOODSAFE certified staff on duty.
Corrective Action(s): The operator must get FOODSAFE training. Referred the operator to the FOODSAFE course. Ensure at least one FOODSAFE certified trained staff is on duty at all times. Once you have successfully completed the FOODSAFE course, submit a copy of the certificate to the inspector at derek.song@fraserhealth.ca or call 604-614-2376.

Comments

- General sanitation needs improvement.
- All coolers < or = 4C.
- All freezers < or = -18C
- The operator failed to provide temperature log. Keep all records in the store for review by the health inspector.
- Two compartment sink available for manual dishwashing. Bleach available.
- Surface sanitizer was available in spray bottle at 100 ppm chlorine solution.
- Orkin Pest Control Company inspects biweekly. Traps are set throughout the bakery. Pest control reports were available.
- Staff wear hair restraints, gloves, aprons.
- Bread display case is clean, tongs stored outside the case. Not being used at the moment.
Note: The operator has not provided an updated Food Safety Plan. Submit a Food Safety Plan to the inspector at derek.song@fraserhealth.ca by August 11th , 2017.
