Observation (CORRECTED DURING INSPECTION): 1 plastic container of gyoza left out at the grill area. Product cooked 1.5 hours prior and left to cool, measured 25 degrees C internally.
Corrective Action(s): Moved to BOH sliding door cooler. Do NOT cool food items at the grill station.
All hot potentially hazardous foods are to be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours of less.

=Upright freezer (-20C) and storage room chest freezer (-18C) measured < -18 degrees C
=Noodle hot holding (67C) and chicken hot holding (78C) measured > 60 degrees C
=2 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method
=Wiping cloths stored in bleach sanitizer solution at 100 ppm chlorine
=No pest activity noted at the time of inspection, general sanitation was satisfactory however some cleaning required on cocacola soda dispenser.
