Observation (CORRECTED DURING INSPECTION): Cooked meat observed at room temperature. Operator claims he's going to be reheating it.
Corrective Action(s): Always store cooked foods inside the cooler and bring them out to be reheated closer to service time. OR reheat it and hot hold it above 60 degC. Do not just store it at room temperature.

Observation: Walk-in cooler is at 8 degC. Operator says that it is on the defrost cycle.
Corrective Action(s): Change the defrost cycle to non-operating hours. Ensure that the temperature drops down to 4 degC or below. Operator called the repairman during the inspection and he will be coming tonight to look at the cooler.

- Handsinks are fully equipped.
- Hot-holding > 60 deg C.
- Coolers <-4 deg C.
- Walk-in freezer's < -18 deg C.
- 200ppm bleach solution is being used for sanitizing.
-Operator has made some improvements in the premises. Recommendation: replace mats as discussed.
