308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Dishwasher was initially not in good working order and a sign was posted over it indicating that it was not in good working order. Assistant Manager mentioned that they were manually washing, rinsing, sanitizing, and air drying the food equipment and utensils before placing it through the dishwasher. Ecolab technicians arrived on-site, stated the underlying problem was that the alarms for the dishwasher were activated as it was out of detergent.

Corrective Action(s): Ecolab technicians muted the alarm, the Person in charge supplied detergent in the dishwasher, and it was turned on again. Dishwasher final rinse chlorine residual was at least 50 ppm at the plate after the dishwasher final rinse [Corrected].
