Observation (CORRECTED DURING INSPECTION): The container containing the scoop for ice contained buildup of black debris. Debris was also evident on two corners inside the ice machine near the back area of the restaurant.
Corrective Action(s): The shift supervisor placed the container for the ice scoop with the ice scoop through the dishwasher however buildup was still present on the container. The shift supervisor then manually scrubbed the container with soap, rinsed it, and sanitized it to remove the buildup. The corners of the ice machine were wiped with a cloth immersed in sanitizer as well. Ensure attention is given to the ice machine and use a flashlight to see debris inside it. Ensure the ice is drained and the ice machine is thoroughly washed and sanitized on at least a biweekly basis.

Observation: Two dry storage containers were covered only halfway by a lid. Note: Lids to cover the containers completely were not available on-site at the time of inspection.
Corrective Action(s): Ensure the dry storage containers used for storing dry food are completely sealed by lids; Correct within 1 week. Provide the area E.H.O. an update regarding the status of the lids as soon as possible.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were 4 degrees C (40 degrees F) or less.
Walk-in-freezer and upright freezer were -18 degrees C (0 degrees F) or less.
Hot-held food was 60 degrees C (140 degrees F) or hotter.
Dishwasher final rinse was 72 degrees C (71 degrees C or hotter) at the plate. The gauge for monitoring the final rinse temperature at the manifold was in good working order.
200 ppm Quaternary Ammonium Compounds (QUATS) Sanitizer was available in the buckets with wiping cloths and from the dispenser.
No signs of recent pest activity were observed at the time of inspection.
Ice machine near the front service area was in a sanitary condition at the time of inspection.
