* Do not overstock the preparation cooler with soft taco packages.. Move the majority of them to the bigger upright cooler.
* Recommended keeping the fresh hot sauces/guacamole based sauces on ice packs and surround them with flexible ice-packs to maintain them at cold temperatures.

Front preparation coolers < 4 degrees C.
Hot holding of fish, pork, chicken, beef and beans in warmers > 60 degrees C.
