Observation:
Walls in kitchen have chipped paint and exposed drywall. Exposed drywall will absorb food debris, water and is not cleanable, this will attract pests.
Corrective Action(s):
Inspect all walls and repair all damaged walls so they are durable, smooth, level, sealed, light colored, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temperatures recorded daily.
- Quats sanitizer was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation is good. No signs of pests.
- Domestic dishwasher in Harvest kitchen had NSF/ANSI Standard 184, ensure staff are using setting the wash cycle to "Sanitize Cycle" at all times. The high temperature dishwasher in Maple kitchen had rinse cycle temperature of 72.3C at the plate's surface as per max/min. thermomrter.
- All foods stored in food grade containers; covered; labeled; dated coded; and 6" off the floor on shelves or in cupboards.
- No expired foods in use. FIFO rules followed.
- FoodSafe certified staff present.
- Valid health permit present as yearly permit fees paid.
