Observation: 1. Ventilation fume hood has some dripping grease; grease and food debris build up behind equipment and grills.
2. Dishwashing area: behind and underneath equipment has food debris.
Area has dim lighting, not condusive for cleaning and dishwashing.
Overhead light coverings have a layer of black fluff or debris.
Corrective Action(s): 1. Scheduled cleaning next week (June 8): ensure that equipment is pulled out at that time and this area is given a deep clean.
2. Deep clean of dishwashing area needed to ensure a sanitary area for clean dishes.
Install better lighting. Clean light coverings.

Observation: Multiple areas of the facility have leaks that require fixing:
-Facet at the back breakfast prep station
-Outside facet is continuously flowing and pooling water. Wet cardboard piece placed underneath.
-Ice machine at back: leaking, pooling water on floors, water being tracked into dry storage area
-Front area line cooler at servery: condensation water on floor from cooler
Grease on floors in kitchen combined with water creates slippery surfaces.
Corrective Action(s): Immediately clean up all spills.
Mitigate spills as much as possible while equipment/facets are being fixed.
Ice machine: inside has some grime or black mold: this will require cleaning and sanitizing. Remove and discard all ice before cleaning.

Washrooms and staff washrooms are also fully supplied for hand hygiene and generally clean.

Items in coolers are all organized, covered and date stamped.
Raw meats are placed on lowest shelves. Vegetables are well separated from meat items.

No signs of pests at the time of inspection.
