Observation (CORRECTED DURING INSPECTION): No detectable QUAT observed from QUAT sanitizer solution in spray bottles when tested with test strips.
Corrective Action(s): General Manager stated sanitizer bottles have not been replenished today and generally it is done everyday before shift starts. Ensure a designated staff replenishes the sanitizer bottles with fresh sanitizer solution before shift to ensure the strength of the sanitizer is maintained. All sanitizer bottles were filled up with fresh sanitizer solution that read 200ppm on test strips at the time of inspection.

Observation:
- Broken glass shards observed on the floor of the front bar area and at the bottom of the glass cooler in the bar area.
- Ice machine at the back observed with black mould in the interior.
- Water on the floor in walk-in cooler.
Corrective Action(s):
- Remove the broken glass shards at the noted areas; ensure all the broken glass are cleaned after each shift.
- Turn off and empty ice machine. Clean and sanitize the interior thoroughly before starting the machine.
- Clean the water in the walk-in cooler.

- All coolers at 4C or below.
- Walk-in freezer at -18C.
- All hot held food items at 60C or above.
- Two High Temperature dishwashers located in the back measured at 71C or above at plate level.
- Glass washer in the bar measured at 25ppm Iodine.
- Vent hood is clean.
- Pest control managed by Rentokil - last report states no notable pest activity. No signs of pest activity observed during the inspection.

*Soap dispensers without lids to be replaced as soon as the new dispensers arrive.
