Observation: Walk-in cooler was measured at 5-6C at time of inspection. Doughs and toppings were being prepared and taken into the walk-in cooler at the same time. The walk-in cooler also appears to be fluctuating according to temperature records.
Corrective Action(s): Please have technician adjust the cooler so it is maintained at 4C or colder. Place an accurate display thermometer inside the walk-in cooler. Keep a copy of the service report for review.

Observation: Dirty items (e.g. inserts etc.) were being collected between the third compartment sink where sanitizing was taking place, and drying rack for clean items.
Corrective Action(s): Discussed one way flow design with operator. Dirty items must be separated from clean items. Keep dirty items in the wash sink directly and not between clean items to prevent contamination.
