Observation: Minor ant infestation present. Observed along the outside wall in kitchen area (below and around sinks and dishwasher. Noticed some old cloths on floor and buckets under sinks hiding food debris. Also probably hiding additional ant activity, possibly nesting tunnel.
Corrective Action(s): Move, organize and clean up the areas bleow and around dishwasher and sinks. Also move the buckets below grill area and make sure food debris is removed. Elimination of the pests will ensure they can't and don't access the food or food storage areas.

Crab meat mix for rolls at room temperature at the end of lunch rush (left at room temperature for more than 2 hours) must be thrown out and not re-used for dinner rush. Important to manage food volumes to minimize waste at the end of the rush.

Dishwasher at 75 C at plate.
cooling units less than 4 C.
hot holding above 60 C.

Sanitizing bucket for surface cleaning tested more than 200 ppm. Watch ratio of water to bleach and try to get below 200 ppm. 1 oz bleach to 1 gallon water.
