Observation (CORRECTED DURING INSPECTION): Observation: Sliced tomatoes in prep cooler was measured to be 6.2C as per probe thermometer. The operator mentioned that it has been placed in the prep cooler approx. 1 hr ago and will be used with 30 min for lunch rush. Temperature log indicated that the cooler was at 36.1F (2.3C) one hour ago.
Corrective Action: Continue to monitor temperature of both the cooler and food items. Keep the prep cooler lid closed when not in use.

Observation (CORRECTED DURING INSPECTION): Observation: No deductible concentration of QUATS bucket by front handwashing station that is used for sanitizing food contact surfaces observed. QUATS solution in a spray bottle that is used for sanitizing back prep. tables was measured to be 50ppm. QUATS sanitizers must be at least 200ppm to effectively disinfect microbes. Unsanitary food contact surfaces may lead to foodborne illnesses.
Corrective Action: Replace the QUATS solution to 200ppm QUATS solution. Test the QUATS solution with test strips frequently to ensure that all QUATS sanitizers maintain 200ppm.

Observation: Observation: Minor numbers of ants (r<20) found by a boiler. Ant insectation may contaminate food items and cause foodborne illnesses.
Corrective Action: Remove the ants, clean the area, and spray the area with sanitizer. Continue to monitor for pest activities. Keep the boiler area clean and free of food debris. If the infestation continues, professional pest control should be called.
