Food complaint received regarding the shrimp salad rolls and avocado shake.
Reviewed how these menu items were prepared. Shrimp rolls are made to order.
All coolers were < 4 C.
All freezers were < -18 C.
Bleach sanitizer was at 100 ppm.
Low temperature dishwasher had 100 ppm chlorine.
No evidence of pests, traps in place.
Discussed using pest proof containers for all food items in dry storage.
The ice machine was clean.
General sanitation was satisfactory.
