Observation: Underside of condenser panel in ice machine had mould/mildew growth.
Corrective Action(s): Empty ice bin, then clean and sanitize ice machine. This must be done on a regular basis.

Observation (CORRECTED DURING INSPECTION): Dishwasher had 0 ppm chlorine residual detected at the dish surface after rinse cycle.
Corrective Action(s): Corrected during inspection. Switched to a new sanitizer bottle and primed line. 100 ppm chlorine detected after rinse cycle. Ensure to use test strips to check concentration of sanitizer daily.

- Bleach sanitizer solution available at 100 ppm in bucket for storing wiping cloths
- Walk-in cooler and prep cooler measured to be at or below 4C
- Freezers measured to be at or below -18C. **Upright domestic freezer needs to be defrosted.
- Ventilation canopy was turned on. Good.
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection
- Buffet steam tables not in use
- Invoices for purchased yogurt available on-site for review. Good.
