Observation (CORRECTED DURING INSPECTION): Food kept in the kitchen prep cooler had an internal temperature of 13 C.
Corrective Action(s): Discarded four inserts of potentially hazardous foods, and moved lower risk items to the walk-in cooler.

Observation (CORRECTED DURING INSPECTION): The dishwasher had 0 ppm chlorine after several runs.
Corrective Action(s): The dishwasher had 100 ppm chlorine after replacing the sanitizer bucket and unclogging the line. Corrected during the inspection. Ensure that it is checked daily with chlorine test strips.

Observation: Mouse droppings found behind the mixing bowl and behind the cook line. Droppings not observed anywhere else.
Corrective Action(s): Premises has a pest control company coming onsite regularly, report reviewed during the inspection. Ensure that the droppings are cleaned with a bleach solution today.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The kitchen prep cooler had an ambient temperature of 15 C and food was held at 13 C.
Corrective Action(s): Repair the kitchen prep cooler so that it can maintain a temperature of < 4 C. The owner has called a technician and they will be here on Friday. Do not keep any food in this cooler until it has been fixed.

All coolers were < 4 C, except for the kitchen prep cooler, as noted in violation code 308.
All freezers were < -18 C.
The glasswasher had 12.5 ppm Iodine.
Hand sinks supplied with hot and cold water, soap and paper towels.
General sanitation was satisfactory.
