Corrective Action(s): In the operator's absence, at least one staff on duty must have FS level 1 certification. Staff need to take the course and get their certification. -Hand sink's fully equipped -200ppm Quats is on-site -Coolers are below 4 degC -Hotholding is above 60 degC. -Walk-in freezer's at -21 degC -Temperature log's being maintained -Front prep cooler was replaced last year. Operator had emailed me an update last year after my last follow-up inspection in October.
