Noted: cooling trays of roast lamb at 64 deg C -operator indicated it will be placed in ice baths once 60 deg C is reached
Ensure proper cooling is followed:
Step1: 60 deg C to 20 deg C within 2 hours: ice baths/ice wands/shallow-wide pans/small containers/electric fans
Step2: 20 deg C to 4 deg C within 4 hours: fridge

Bleach sanitizer spray >100ppm as per test strips

General sanitation very good including hard-to-reach areas
PCO pest control comes in monthly

Handwash sinks adequately stocked and clear for use
