Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food such as rice, chickpea curry & tomato gravy stored in walk-in cooler were found at internal temperature between 10C - 16C.
Corrective Action(s): Ensure that the cold potentially hazardous food is stored at a temperature of 4C or less.
Above mentioned food was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Even after multiple runs, low temp dishwasher was not able to dispense any bleach solution.
Corrective Action(s): Ensure that the utensils/food contact surfaces are adequately cleaned and sanitized. Staff used 2-compartment sink as an alternate for sanitizing all the utensils. Technician was called by the operator during inspection.

Observation: Multiple food items stored in walk-in cooler and walk-in freezer were found uncovered.
Corrective Action(s): Ensure that food is either stored in original packaging or covered properly to prevent any risk of contamination.

Observation: Multiple flies were observed in two different corners of the facility near the food storage area.
Corrective Action(s): Ensure that the facility is free of pest/rodents.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Walk-in cooler was unable to maintain an ambient temperature of 4C or less.
2) Walk-in freezer had build-up of ice on the walls and floor. Flurries were falling down at the time of inspection. Door seal was found worn-out/broken.
Corrective Action(s): 1) Ensure that the walk-in cooler is maintained at a temperature of 4C or less. Internal temperature of cold potentially hazardous food stored in walk-in cooler was recorded. Food was either discarded or moved to walk-in freezer & stand-up cooler as per the risk assessment. Technician was called at the time of inspection.

2) Ensure that walk-in freezer is maintained in good working order to maintain temperature of at least -18C. Defrost/service the freezer and replace the door seal.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Walk-in freezer at -3C.
- Stand-up cooler at 2C.
- Prep cooler at 7C and used for storing non Potentially hazardous food. Staff was aware that the cooler is malfunctioning and could not maintain temperature of 4C or less.
**Ensure that the cooler is able to maintain a temperature of at least 4C prior to storing any cold potentially hazardous food in it.
- No hot holding at the time of inspection.
- Temperature logs were maintained and found up to date. However, the recorded temperature was not right accurate.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer bucket available and the concentration of bleach noted at 200ppm.
- 2-compartment sink on site.
- Washrooms maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.
- Sanitizer logs were maintained and found up-to date. However, staff was recording concentration of bleach in low-temp dishwasher without using test strips.
**If logs are to be maintained, it is advised to first conduct proper testing then record it.

Storage:
- All food items were stored at least 6" off the floor.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks. Last inspection conducted in June 2021.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.

COVID-19 Safety Plan:
- A copy of COVID-19 Safety Plan was available on site.
- Appropriate COVID-19 signage and protocols were in place.
- Staff health checks were conducted and records were maintained.
