Observation (CORRECTED DURING INSPECTION): - Sanitizer was not in use for food contact surfaces in the kitchen. In use wiping cloths were present on prep table with 0ppm chlorine residual.
- Spray bottle labelled sanitizer had 50ppm chlorine
Corrective Action(s): - To minimize microbial growth and prevent contamination of food surfaces, keep in use wiping cloths in sanitizer solution. Ensure sanitizer solution maintained at required level of 100 to 200ppm chlorine.
- Corrective action completed at time of the inspection: Sanitizer solution (200ppm chlorine) was prepared at time of inspection for in use wiping cloths and spray bottle.

Observation (CORRECTED DURING INSPECTION): - Liquid soap present at kitchen handsink; however, automatic dispenser was not functioning
- Paper towel not present in staff washroom
Corrective Action(s): - Battery was replaced for soap dispenser at time of inspection.
- Supply paper towel to staff washroom. Completed at time of inspection.

Observation: - Plastic cups of milk and coffee were being stored inside ice reservoir of ice machine. This can contaminate ice.
- Ice scoop was stored in ice

- Store ice scoop on designated holder

Observation: - Minor amount of mouse dropping noted on floor in the following areas:
- under 2 compartment sink in kitchen
- along wall at entrance to dry storage room and between shelving and dry goods bins
Corrective Action(s): - Clean up all droppings and sanitize affected areas. Continue to monitor for any additional activity. Notify pest control technician of areas where activity has been noted for additional control measures to be applied if needed.

Observation: - Wall adjacent to prep table where slicer is located has holes.
- Exposed drywall and unsealed wood surface present on wall in dishwashing area
Corrective Action(s): - Repair walls so that surface is impervious, smooth and easily cleanable. Durable finish (eg. frp) should be used in dishwashing area. To be corrected by: 19-Nov-2023

Comments

- Sanitation of food premises was satisfactory except for above noted areas
- Handsink at front server area had liquid soap and paper towel present. *Load paper towel in dispenser.
- Kitchen handsink had liquid soap and paper towel present. *See violation above re: soap dispenser not functional
- Coolers were operating at 4C or colder. Exception: front server cooler not fucntional; only non hazardous items stored in it
- Freezers were maintaining food products in a frozen state
- Hot held food (rice) was maintained above 60C
- Foods stored in coolers were stored in a manner to prevent contamination - wrapped/covered, raw meat and raw eggs stored beneath ready to eats items and produce
- Observed food safe thawing practices - under cold running water
- Dishwasher was operational. 100ppm chlorine detected on dish after cycle. Ensure sanitizer level is checked at least daily.
- Reviewed cleaning and sanitizing procedures for slicer. Operator reported it is cleaned after use and sanitized with chlorine bleach solution.
- Reviewed cleaning and sanitizing requirements for blender pitcher - to be cleaned and sanitized (in dishwasher or manually at dishwashing sinks) at least every 4 hours.
- Pest control contract in place with monthly service. Most recent service report (Sept) viewed at time of inspection.
- Public washrooms were maintained and supplied with liquid soap and paper towel
- Health permit with valid decal posted
- Foodsafe requirement met at time of inspection.
