Observation: The required cleaning has not occurred. Rusty shelves still found in walk in cooler. Debris still on food equipment, walls, floors and shelves.

Comments

Timers or some other method is still required for room temperature monitoring of sushi and utensils.
Currently sushi is being stored in the cooler.
Quat sanitizer dispenser is still inconsistently dispensing the correct concentration of quat. Please address. Use bleach water as discussed.
