Observation: Several food inserts in pizza cooler measured at 8C; in walk-in cooler at 6C and bar reach in cooler at 8.5C.
Corrective Action(s): Please monitor food temperature as lunch rush nears end, and discard food if it maintains over 4C in the next hour.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Meat slicer used from last night was left dirty as meat debris were identified. The unit was not cleaned after use.
Corrective Action(s): Staff onsite cleaned and sanitzed the unit during inspection. Please inform all staffs that meat slicer must be cleaned at least every 4 hours if used constantly, or after use.

Observation: Ladle stored inside inserts of sauce in the walk-in cooler.
Corrective Action(s): Please store ladles outside of food containers so the inserts can be properly closed to prevent food from contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings identified in several areas - underneath stainless steel table by pizza topping cooler, on floor by wall of pizza oven, behind dough mixer, by back door and between wall and grease trap.
Corrective Action(s): Please remove mice droppings, clean and sanitize the affected areas more frequently to monitor for pest activity. Also discussed adding measures to seal gaps identified on back door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Tomato sauce spill noted on the containers, shelves and floors of walk-in cooler. Water spill noted on the shelving units of walk-in cooler. Food debris noted on the shelving unit beside pizza topping cooler, as well as on the kitchen floor (under shelves, between equipment).
Corrective Action(s): Please do a deep cleaning on all areas noted above. Food spills should be cleaned up as soon as possible.

Observation: Walk-in cooler at 6C, pizza cooler at 8C and bar reach in cooler is at 9C. Gasket on right hand side of three door pizza cooler appears not intact. The same cooler door also must be closed at a certain angle to fully close.
Corrective Action(s): Adjust temperature of noted coolers above so they are <4C, temperatures were dropping at time of inspection. Relocate or replace the display thermometer for walk-in cooler. If temperatures cannot maintain under 4C, have a technician service the refrgieration units. Replace the gasket and repair the cooler door.
