Follow-Up to routine inspection #KLIU-C4YVG2 on July 16, 2021.

Code 308 has been corrected:
- Air temperature able to reach 4C following lunch rush. Please ensure this cooler is monitored more closely due to the frequent use and placement across from the toaster/oven.
- Probed insert items included chicken breast (5.5C), sliced ham (4.9C), and sliced turkey (4.9C).
- Insert items were filled less than 2 hours ago (facility opens at 10am, inspection took place at 11:30am).
- According to operator, they are typically used up within 30 minutes to 1 hour depending on lunch rush.

Recommendations:
- If right prep cooler is consistently experiencing fluctuating temperatures, store any insert items that cannot be used up within 4 hours in the left prep cooler that is maintaining 3C. Items that can be used up within 4 hours may be stored in the warmer cooler with time tracking in place. Left over items must be discarded.
