Observation: Products such as kimchi and kombocha were stored at 6-7C. Air curtains not used and wooden boards used to line racks in the cooler.
Corrective Action(s): Please adjust temperature and remove the wooden boards. Use air curtains as necessary. Ensure foods are kept at 4C or colder. Relocate products that require refrigeration to working coolers if temperatures do not drop to 4C in an hour.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) No sanitizer onsite. 2) Inquired about manual warewashing and operator is unsure how to do it properly. 3) Small amount of mildew like substance found inside ice machine.
Corrective Action(s): 1) Demonstrated to operator that 100ppm bleach sanitizer in labelled spray bottle is required to be applied on food contact surface. 1 tsp bleach to 1 litre water. 2) Wash items such as cutting board and knives with detergent, rinse off in the same sink, then sanitizer in 100ppm for 2 minutes before air dry. Refer to the FHA warewashing sign posted on the sink. Drain plugs available. 3) Please wipe down inside of ice machine more regularly. Complete by follow up.

Observation: A container of bean sprouts in the display cooler is self served, without cover, and has a pair of tongs stored in the sprouts.
Corrective Action(s): Obtain a cover for the bean sprouts. Place the pair of tongs outside of the container to prevent hand contamination on the bean sprouts.
