Observation (CORRECTED DURING INSPECTION): Half tray of eggs were stored at room temperature for an unknown period of time. Surface temperature was measured at 20C.

Observation (CORRECTED DURING INSPECTION): Wiping cloth was stored in the sink of the hand washing station at the front area.
Corrective Action(s): Remove the wiping cloth from this sink. Hand washing stations must be kept clear of any obstructions to allow for proper hand washing. Date to be corrected by: Immediately

Comments

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, prep, drinks) at < or = 4C
- Freezers (walk-in) at < or = -18C
- Hot holding units at > or = 60C
- Low temperature dishwasher is in use. Chlorine sanitizer dispensed measured 50 ppm at the plate level during the final rinse.
- Three compartment sink is available for manual dishwashing
- 200 ppm Quat sanitizer is available
- Dry storage is satsifactory
- Ice machine is well-maintained. Ice scoops are stored in a sanitary manner.
- No signs of pests observed during inspection. Ecolab provides monthly pest control services.

*Dishwasher is showing a detergent error. Operator will call Ecolab to service the dishwasher. Manual dishwashing method will be used until repairs are made.
