Observation: Bus pan of french onion soup observed cooling in beer walk-in cooler. Product temperature > 65 C at time.
Corrective Action(s): Do not cool in walk-cooler as this will warm up the ambient temperature. To cool, place on ice and stir; must cool from 60 C to 20 C in 2 hours, and 20 C to 4 C in 4 hours. All batch cooling must be done on ice, or with ice wand before placing into coolers.

Observation (CORRECTED DURING INSPECTION): Wiping rags in bar area stored in solution, no chlorine detectable.
Corrective Action(s): Staff remade to ~ 100 ppm chlorine. Must ensure this is checked routinely.

Observation: Significant fruit fly problem observed throughout bar and kitchen area.
Corrective Action(s): Contact your pest technician, increase frequency of treatment to weekly (today); send service invoices to EHO. Follow pest technician's recommedations.

Observation: 1. Hot water tap of handsink by ice machine not working. Staff have been using other handsinks for handwashing.

Corrective Action(s): 1. Repair handsink, each handsink must be able to supply hot and cold running water at all times (1 week).
2. Repair leaks (2 weeks) as the moisture is not helping with fruit fly problem.
