- Manual Dishwashing: Refer to Violation Notes.
-> 4 Step Method (Quat): Ensure all food contact surfaces are cleaned and disinfected after use or on a timely manner. All Items are to be stored in a sanitary manner. ((ie: Hangers/Magnetic knife holders)
-> Wiping Cloth Storage: (Quat) - Limit the amount of cloths being used at any given time. Wiping cloths are to be stored in a sanitizer at all times, completely submerged. No detergent.
-> Equipment: Grinders/slicers - cleaning and disinfection procedures discussed..
- Food Storage: Separation between chemicals and cleaning supplies are to be maintained. Storage areas are to be kept clean and organized. Any unused items are to be removed to free up space.
- Chemical Storage: To be stored in designated areas.
- Sanitary Facilities: Ok.
- Staff Hygiene: Discussed..
- Sanitation: Refer to Violation Notes.
- Garbage, Recycling and Composting Storage: Items are to be kept stored in covered, rodent proof containers.
