Observation: Top portion of prep cooler was 15 C, mid portion of cooler was 7 C and inserts were over filled.
Corrective Action(s): Do not use top portion of cooler for potentially hazardous foods, (e.g. use for herbs), decrease amount in each of the inserts in the mid section, refill more often. Have unit serviced to ensure it is able to 4 C in all sections.

Observation: Found spring rolls at 46 C, staff not sure when cooked believes 2.5 hours prior.
Corrective Action(s): Spring rolls are to be thrown out.

Observation: 1. Found mandolin slicer to be put away with carrot still on it.
2. Inserts in the top portion of prep cooler had mold and rotting food in them
3. Counters are wiped with dirty rags that sit out on counter.
Corrective Action(s): Must ensure all equipment and food contact surfaces are maintained in a sanitary manner, ensuring to sanitize regularly.
1. Re-wash and sanitize slicer, and inserts
2. Change inserts in prep cooler daily if not more then once per day
3. Ensure wiping rags are kept in sanitizer or use new cloth every hour with sanitizer spray bottle.

Observation: 1. Found onions sitting on the floor.
2. Found food uncovered in the walk in cooler
3. Found food being stored below dripping condenser in walk in cooler.
4. Found ice scoop sitting in dirty insert
5. Found bowls of food being double stacked without barrier between.
6. Observed staff handle multiple food items including shrimp with the same gloves. Even put some foods back that were previously placed in bowls and double stacked.
Corrective Action(s): 1. Must keep foods 6" off the floor
2. Must keep all foods covered when not being used
3. Do not store food under drips in walk in cooler, and have cooler repaired so it is not dripping.
4. Wash and sanitize ice scoop and the insert, ensure to store in a clean insert to prevent contamination of ice.
5. Do not double stack bowls of food in cooler. Fill each bowl as order comes in, or only fill as many bowls as can store in single layer in the cooler.
6. Remind all staff to use separate tongs and/or gloves for each item especially when dealing with potential allergens such as shrimp.

Observation: Found food build up under and behind cooking equipment, freezer, dishwasher and shelving in back kitchen area. Also found food build up on ice machine and pop accumulating on floor in front of pop syrups as they are leaking.
Corrective Action(s): A thorough leaning is required through out premises especially in the above noted areas.

Observation: Freezer with stainless steel top for food prep has been removed and new freezer without stainless steel top has been added.
Corrective Action(s): Must replace stainless steel top as it was used for food preparation with out it there is insufficient space for food preparation.

- freezer was -18 C
- Hot holding except spring rolls was 60 C or hotter
- No signs of pest activity noted during inspection
- Hand sinks had liquid soap, paper towel hot and cold water
- Dishwasher had a final rinse of 74 C at plate and 85 C at gauge
- Spray bottles had >200 ppm chlorine, diluted during inspection to 200 ppm. Ensure to keep 1 spray bottle at each station
