Observation (CORRECTED DURING INSPECTION): Paper towels were missing at the front handwashing station. Replenished at the time of the inspection.
Corrective Action(s): Ensure to have all handwashing stations properly equipped at all times.

Observation: Rodent droppings were observed from one corner of the floor in the storage room- by the back entrance. Droppings were not observed in the food prep area.
Corrective Action(s): Ensure to have all droppings removed today as agreed at the time of the inspection. Monitor the area every morning and contact the professional pest control company if worsens.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas require cleaning:
- Floors/corner of the wall by the back entrance. Remove cardboard and garbage back from floor.
- Floors underneath dishwasher and storage unit by the walk-in cooler.
Corrective Action(s): Ensure to have the above areas cleaned on a more regular basis.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - Soap dispensers for both hanwashing stations not in good working order. New dispensers to be delivered/installed on July 20.
- Digital thermometer attached on under counter cooler requires a repair/replacement. Parts on order.

Corrective Action(s): - Continue to use the liquid pump soaps until the new dispensers are installed.
- Continue to check food temperature in each drawer as advised at the time of the inspection.

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at/below -18'C
- Hot-holding units operating above 60'C
- Temperature monitoring system in place. Logs recorded x4 per day and kept up to date.
- 200ppm Quats available in buckets and in dishwashing sink. Automated dispenser at correct concentration.
- Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
- General food storage practice satisfactory throughout.
