Observation (CORRECTED DURING INSPECTION): < 10 PPM chlorine residual detected in the low temperature dish machine at the time of inspection.
Corrective Action(s): **Issue corrected at the time of inspection** Staff fixed the dish machine. 50 PPM chlorine residual was detected at the plate level after the wash and rinse cycle.

Observation (CORRECTED DURING INSPECTION): Raw eggs were stored right beside cooked chicken in the walk-in cooler.
Corrective Action(s): **Issue corrected at the time of inspection** Staff removed the cooked chicken and store it in the walk-in freezer instead. Please remember to stor raw meat and raw eggs below and away from cooked and ready-to-eat food.

Observation: Some mouse droppings noted on the floor beside the stove. Small amount of mouse droppings noted in the back dry storage area.

Comments

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at at 4.0C or below.
All freezer units were at -18.0C or below.
Rice were being hot held at over 60.0C in the rice cookers.
General sanitation greatly improved.
Sanitizer spray bottles available. 2 tested and both were noted with 200 PPM chlorine residual.
As per staff, in-use utensils are store in a water bath that gets changed out every 1 - 2 hours.
Proper thawing observed in the sink - with cold running water.
