Observation (CORRECTED DURING INSPECTION): Meat slicer and potato press were not in use and had remnants of old food debris present.
Corrective Action(s): Disassemble both the meat slicer and the potato press to clean and sanitize all parts. Corrected at time of inspection.

Observation: - Both walk-in coolers need cleaning and sanitizing (floors under racks as well as walls, doors, and handles).
- Walls and backsplashes need cleaning and sanitizing - especially in back area by walk-in coolers.
Corrective Action(s): Ensure backsplashes, doors, and handles of equipment are cleaned and sanitized on a daily basis.
Walk-in coolers should be cleaned and sanitized once a week at a minimum.

- All hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm in several buckets, spray bottles, and from main dispenser
- High-temperature dishwasher reached 75C at plate surface level during rinse cycle
- All coolers were at or below 4C
- All freezers were at or below -18C
- Hot held items were above 60C
- Food storage practices satisfactory
- Ice machine was maintained in sanitary condition, scoop stored in designated scoop holder
- Dipper well in use for ice cream scoops - good
- Sanitation of main kitchen floors satisfactory
- Pest control in place. No signs of pest activity noted at time of inspection
- Temperature records well maintained and up to date
