Observation (CORRECTED DURING INSPECTION): - In-use utensils (tongs, chopsticks, etc.) at the stove were covered in grease and old food debris.
- Old food debris (onions) noted on slicer behind the blade guard.
Corrective Action(s): - Utensils washed and sanitized at time of inspection. Ensure to wash utensils in the dishwasher throughout the day and at the end of each day.
- Ensure to throroughly clean and sanitze the slicer after each use.

Observation (CORRECTED DURING INSPECTION): Hand sink in kitchen was missing paper towels.
Corrective Action(s): Operator restocked paper towel dispenser at time of inspection. Ensure all hand sinks are always supplied with liqiud soap and paper towels.

Observation (CORRECTED DURING INSPECTION): - Raw meat stored above and next to vegetables and other ready-to-eat items in prep cooler and in walk-in cooler.
- Many food items were stored uncovered.
Corrective Action(s): - Operator reorganized coolers at time of inspection. Ensure to always store raw meats below ready-to-eat items.
- Ensure all food items are stored properly covered.

Comments

- Front hand sink properly supplied.
- Bleach sanitizer solution available at 100ppm in buckets. Ensure to store wiping cloths in sanitizer in between uses.
- High-temperature dishwasher reached 71C at the dish surface during sanitizing rinse cycle - good.
- All coolers were measured at 4C or colder
- All freezer temperatures satisfactory
- No hot-holding at time of inspection
- Vent hood maintained in sanitary conditions.
- Ice machine maintained in sanitary conditions, ice scoop stored separately.
*General sanitation of cooking and in-use equipment requires improvement.
