Observation (CORRECTED DURING INSPECTION): Less than 200 ppm QUATS sanitizer was available in the sanitizer pail in the front service area.
Corrective Action(s): Ensure the QUATS sanitizer is changed frequently to maintain 200 ppm QUATS sanitizer. Staff replaced the sanitizer with 200 ppm QUATS sanitizer during the inspection.

Comments

Handsinks were properly supplied.
Refrigeration units were at or below 4 degrees C.
Upright freezer was at or below -18 degrees C.
Staff were observed monitoring refrigeration temperatures during the inspection.
3-compartment sink was supplied with hot and cold running water. Note: Sink plugs were not available at the time of inspection. If you are unable to find the previous sink plugs, please obtain adequately sized sink plugs for the 3-compartment sink.
Dishwasher final rinse temperature was at or above 71 degrees C (measured at 78 degrees C) at the plate level. All ware-washing is conducted through the dishwasher according to the Supervisor.
Dishwasher final rinse temperature was at or above 180 degrees F for at least 10 seconds at the manifold level during the final rinse cycle.
QUATS test strips were available on-site.
Ice machine was in a clean condition.
No signs of recent pest activity were evident at the time of inspection.
