Observation (CORRECTED DURING INSPECTION): The staff washroom in the back lacked liquid soap.
Corrective Action(s): Ensure all handsinks are supplied with liquid soap, hot and cold running water, and paper towels. The operator's son replaced the liquid soap at the handsink.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): An open bag of flour opened earlier today was left open in the back storage area.
Corrective Action(s): Ensure all open dry foods are stored in pest-proof containers with tight fitting lids. The operator's son transferred the open bag of flour into a food container with a lid.

304 - Premises not free of pests [s. 26(a)]
Observation: Droppings were observed in the dry storage area (near the dry flour and dough mixer), on the table where oil is stored, and in a hard-to-reach corner near a chest freezer. A pest control program via ACE pest control was in place on a monthly basis. No ripped packaging of food was observed. The operator's son has called the pest control company to arrive tomorrow morning by 10 AM.
Corrective Action(s): The operator's son has rewashed food contact surfaces (knives, cutting boards, and containers) through the dishwasher and covered food in the walk-in-cooler.
The following is to be done immediately:
1. Clean the affected areas with bleach water and remove the droppings.
2. Keep all foods covered (open foods in pest-proof containers with tight fitting lids) and store food at least 6 inches off the floor. Check for any ripped food and discard accordingly.
3. Re-wash and sanitize all food contact surfaces (prep. tables, cutting boards, knives etc.), prior to use, cover food containers with saran wrap at the end of the day.
4. Increase the pest control visits to once per week and provide the area E.H.O. with a copy of the pest control report.
5. De-clutter as much as possible. Begin by removing the large garbage bag containing miscellaneous items (chop sticks, equipment) that was mentioned to be for personal use.
6. Monitor for signs of further pest activity.

Observation: The screen at the backdoor was not intact and the screendoor was in use at the time of inspection.
Corrective Action(s): Repair the screen at the backdoor to prevent any entry point for a pest (e.g .mouse, rat, and/or cockroach) from entering restaurant; Correct within 2 weeks. In the meanwhile, keep the backdoor closed. The operator's son closed the door during the inspection.

Observation: The upright cooler near the walk-in-cooler had a malfunctioning thermometer and the prep. cooler lacked a thermometer. Correct within 1 week.
Corrective Action(s): Replace all inaccurate/missing thermometers with new accurate thermometers. In the meanwhile, continue using the probe thermometer to check refrigeration temperatures.

Hot-held foods were 60 degrees C (140 degrees F) or hotter.
Temperature records were available on-site.
200 ppm chlorine sanitizer (bleach water) was available in the bucket with wiping cloths.
Dishwasher final rinse was 73.3 (71 degrees C or hotter) at the plate.
