Observation (CORRECTED DURING INSPECTION): Meat slicer was found to have food debris under the sharpening guard and blade guard.
Corrective Action(s): Deli slicer must be properly disassembled for cleaning and sanitizing after each use to prevent potential cross contamination of foods. Slicer was cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): A container of raw chicken was stored above ready-to-eat foods.
Corrective Action(s): Raw meats must be stored below and separate from ready-to-eat foods to prevent potential contamination of foods. Container of raw chicken was relocated at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Frozen soup was thawing at room temperature.
Corrective Action(s): Potentially hazardous foods must be thawed under cold running water or in a cooler at 4C or less. Food item was placed in the cooler at the time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mould was found on the prep cooler door seals and grease was found on the cabinet handles.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times to prevent potential pest attraction.

Observation: Bleach sanitizer pail was not labelled.
Corrective Action(s): Ensure all containers are properly labelled to prevent accidental mixing and or misuse of chemicals. Containers must be relabelled as needed.

Comments

-Prep cooler was at 4C (top and bottom).
-Upright kitchen cooler was at 4C.
-Customer area cooler was at 4C.
-Chest freezers (two in back and one in front area) were at -18C.
-Hot holding was greater than 60C.
-High temperature dishwasher had a final rinse temperature of 73C on the dish surface (minimum of 71C required for proper sanitizing).
-Bleach sanitizer pail and spray bottle were at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-No signs of pests noted at the time of inspection.
-Washroom clean and equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until May 19, 2023.
-Please contact the inspector if you have any questions or concerns.
-Operator signature not required at this time due to the COVID-19 Pandemic.
