Handsink has been repaired. stocked with liquid soap, paper towels, and hot/cold running water
Brisket in the cambro hot holder was being hot held at 140F - good
Cleaning has been improved in the previously noted areas. ensure that the previously noted areas are cleaned on a more frequent basis
Wiping cloths were stored in sanitizer solution at 200 ppm QUATS in buckets - good
Operator has indicated that cooling is now conducted properly using air cooling and the walk-in cooler. DO NOT COOLER FOODS IN THE SMOKER.
Staff on site had FOODSAFE LEVEL 1 certification at the time of inspection
