Recommendations:
1. Staff other than the operator should have FoodSafe Level 1 or equivalent so that in the operator's absence there is a staff on duty with food safety training.
2. Record temperatures of coolers, freezers and hot holding units to ensure they meet the temperatures required on a daily basis.
