Observation: 1. Asked staff to demonstrate how equipment and dishes are washed and sanitized, currently not sanitizing food contact surfaces. 2. Found multiple containers, dishes and equipment that have been put away with food and grease still on them
3. Currently using lemon scented chlorine bleach.
Corrective Action(s): 1. Remind all staff of proper manual ware washing: 1. Wash with soap, 2. rinse, 3 soak in chlorine and water (1 ounce per gal water) for 2 minutes. 4. air day Sign is posted for proper washing/sanitizing.
2. Ensure all dishes, containers and equipment are properly rewashed to remove all food and grease before they are put away
3. Ensure to use unscented regular chlorine bleach to sanitized counter tops.

Observation (CORRECTED DURING INSPECTION): Soap in the back hand sink was plugged with large piece of solidified soap, and paper towel dispenser is broken. Only hand sink in the kitchen.
Corrective Action(s): Remind all staff of proper hand washing techniques which include using liquid soap, paper towel.
Ensure liquid soap is used each time and hands are washed frequently, repair paper towel dispenser.

Observation: 1. Found food being store uncovered (buffalo mix).
2. Found food being store amoung a large population of fruit flies out in back hall way.
Corrective Action(s): 1. Must keep food (especially dryr goods) in pest proof containers after opening.
2. Must keep food away from fruit flies and out of back hall ways as area is not intended fo food storage.

Observation: 1. Found mice droppings through out kitchen, pest control is on contract
2. Large fruit fly population in back hall way where storing food, flies entering kitchen as back door remains open.
Corrective Action(s): 1. Ensure to follow pest control company's advise, and increase cleaning of premises.
2. Clean floors in back hall and discard all garbage, move food into kitchen and keep door closed.
Provide copies of pest control reports to health department monthly until mice no longer present.

- Upright freezer was - 15 C
- Spray bottles had 200 ppm chlorine
- Hand sink in the front had liquid soap, paper towel, hot and cold water.

NOTE: if continue improper manual washing continues will require a 3 compartment sink or dishwasher be installed.
