Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (The high temp dishwasher @ 66oC-69oC on the plate level detected.)
Comments

Dishwasher now functioning as low temp dishwasher (installed and primed by the professional technician). 50ppm Chlorine was detected on the plate level.
Ensure the chlorine sanitizer bottle is always available while running the dishwasher. Replace to a new bottle once the bottle is 1/4 left to ensure the chemical is drawn into the dishwasher.
Check the chlorine level using the test strip at least once a day + everytime after changing the sani bottle.

The walk in freezer was repaired and holding foods @ -18oC

Note:
2 ovens, combi steamer and the dishwasher will get replaced in December 2017. Submit a floor plan and specification of the equipment to the Health Department for approval.
