Observation: Back door entrance - door sweep is missing, clearance between bottom of door and floor sufficient to allow for entry of pests.

Rodent snap traps by safe are currently disarmed.
Corrective Action(s): Re-install door sweep - gap between sweep and floor to be less than 1 cm.

Re-arm all premise snap traps.

Observation: Food debris and mouse droppings observed in the following locations: around back mop sink and adjacent wall, front service area on floor around safe, around compressor of front right prep cooler and inside storage cabinet below coffee machine / panini grill.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.
Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.

Observation: Insufficient hot water. Less than one compartment of the sink was full and water was running cold. Contractor indicates that 2 X 40 Gallon hot water tanks were installed. Will be repaired for tomorrow. Reinspection tomorrow morning, 9 am.
