Observation (CORRECTED DURING INSPECTION): Observed a hot pot of soup in the walk-in cooler
Corrective Action(s): Soup removed, placed into another container and then allowed to cool at room temperature prior to placing into a cooler maitaining 4C or below

Observation: 1. Observed a large container of cooked diced potatoes at room temperature. Probed at 13.6C
2. Prep cooler observed at 6.9C as well as significant ice build-up
3. Walk-in cooler observed at 8.9C - 9.2C.
Corrective Action(s): 1. Container of diced potatoes discarded at time of inspection. In the future, take out only a small portion that may be used up with 30 minutes, Rest ot product should be in a cooler at 4C or below.

2. All foods taken out of prep cooler at time of inspection and moved to another cooler at 4C or below

3. All foods taken out of walk-in and moved to other coolers maintaining 4C or below

Observation (CORRECTED DURING INSPECTION): Dishwasher tested at 0ppm Cl - Observed sanitizer container was empty at time of inspection
Corrective Action(s): Staff changed sanitizer container. Now tested at 50ppm Cl

Test strips available on-site. Ensure you are maintaining your daily log and checking for a minimum 50ppm Cl reading.

Observation: 1. Ice machine is being held together with duct tape
2. Gasket on walk-in cooler door is almost non-existent
3. Prep cooler and walkin cooler not holding foods at 4C or below
Corrective Action(s): 1. Replace ice machine gasket. Operator stated he has purchased a new ice machine and plans on replacing the whole unit
2. Replace gasket on walk-in cooler door to maintain temperature of unit
3. Service prep cooler and walkin cooler to ensure they can maintain foods at 4C or below

Observation: 1. Observed several pans, pots, equipment, etc not in use
2. Observed potato dicer still affixed to wall - Operator stated they do not use this item
