Comments

The Foodsafe textbook makes reference to only air-drying of wares after dishwashing. Towel-drying is not prescribed. Ensure staff adheres to using Quats sanitizer with wiping clothes. All temperatures were satisfactory. High-temperature dishwasher exhibited >77 degrees Celsius at utensil surface. Quats solution in spray bottle exhibited 200ppm. Dipping well is fully functional. General sanitation is satisfactory.
