302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in spray bottles (X2) measured at >>200 ppm chlorine concentration with test strip. Staff diluted sanitizer to a concentration of 200 ppm chlorine during inspection.
Corrective Action(s): Prepare bleach sanitizer in spray bottles (as per approved sanitation plan) at a concentration of 100-200 ppm chlorine concentration by mixing 1/2 to 1 teaspoon of bleach with 1L of water to adequately sanitize and remove harmful bacteria / toxins from food contact surfaces, equipment and utensils. Obtain chlorine test strips to verify sanitizer strength throughout the day.

Observation (CORRECTED DURING INSPECTION): Hand washing station in kitchen observed not supplied with paper towel. Staff placed napkins at the hand washing station during inspection and stated that the paper towel rolls are currently on order for delivery today.
Corrective Action(s): Place paper towel in the dispenser once the shipment arrives. All designated hand washing stations must be adequately supplied with hot and cold running water, liquid soap and paper towel AT ALL TIMES to ensure staff are washing their hands properly and at adequate frequency.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1. Bag of carrots observed stored directly on the floor in the storage area. Multiple bags of potatoes observed stored directly on the floor in the service area. Staff placed all foods on pallets during inspection.

2. Six opened cans of food observed stored in the walk-in cooler. Staff voluntarily discarded the canned foods during inspection.

3. Container of raw meat observed stored on a shelf directly above uncovered cut vegetables. Staff moved the raw meat container to the bottom shelf during inspection.

4. Multiple food items obsevred uncovered in the walk-in cooler. Staff covered all foods with plastic wrap during inspection.
Corrective Action(s): All food must be stored at least 6 inches off the floor and covered at all times to prevent contamination.
Opened cans of food must be used immediately or discarded or stored in a food grade container after use. Opened cans of food may cause metal leaching into food and cannot be stored in the walk-in cooler. Raw meat must always be stored away from ready-to-eat foods, on bottom shelves in coolers and preferrably in seperate sections of walk-in coolers to prevent direct contamination of food.

Observation: General sanitation observed unsatisfactory, with grease/food debris in the following areas:
- All walls and floors behind and around the dishwashing sink and the cooking units
- All floors in the kitchen
Corrective Action(s): Remove large pieces of equipment and conduct a deep clean of the premise. Degrease, clean and sanitize aforementioned areas to remove food debris build-up. Conduct regular cleaning to prevent build-up.

Observation: No staff on site has FOODSAFE Level 1 training during inspection.
Corrective Action(s): At least one staff member must apply for FOODSAFE level 1 training or equivalent. Submit proof of application to the health inspector via email. Training must be completed within 1 month. Once training is completed, submit certificate of training to the health inspector via email.

- 3-compartment sink available with drain plugs and bleach
- No signs of pest activity during inspection
