Observation (CORRECTED DURING INSPECTION): **Note: This is a repeated violation** A container of raw eggs stored on the top shelf above produce in the kitchen upright refrigerator.
Corrective Action(s): Issue corrected at the time of inspection. Staff moved the containers of raw eggs to the lowest shelf, below the produce.
Please ensure the storage hierachy is followed in all refrigerator units to ensure produce and ready-to-eat foods are stored on top or away from raw meat and raw eggs.

Observation: **Note: The following are repeated violations**
1. As per staff, professional cleaning was done on the fume hood. However, grease buildup still noted on the fume hood. Please ensure in betwen professional cleaning, staff are taking down the baffles in the fume hood for cleaning and sanitation. If grease buildup still noted after cleanup then operator needs to revise the frequency of cleaning to ensure they maintain in a sanitary condition at all time.
2. Some grease buildup still noted on the floor behind the cookline.
3. Mouse droppings still noted below the handwash station in the sushi area.
Corrective Action(s): Clean the aforementioned areas and maintain in a sanitary condition. See notes from previous routine inspection report# KLAI-CEKRWX.

Follow-up inspection conducted for inspection report# KLAI-CEKRWX
Dry storage shelvings in the kitchen area noted in a sanitary condition.
Cleanliness of the fume hood and deep fryer cabinets have slightly improved, however cleaning is still required.

Please note: Fix all the repeated violations noted in the inspection report. If repeated violations are observed in the next follow-up inspection, increase enforcement action (correction order/ ticket) may result.
